"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
10 cups popped popcorn
1/2 c. butter
1 c. brown sugar
1/4 c. dark Karo syrup
1/4 tsp. salt
1/4 tsp. soda
1/2 tsp. vanilla

Directions:
Directions:
Put popcorn on a cookie sheet in the oven at 250º to warm. Add 1 1/2 c. peanuts. Mix butter, brown sugar, Karo syrup, and salt in a heavy sauce pan. Boil over medium heat stirring constantly until sauce comes to a good boil. Turn the heat down and let it boil for 5 min. on medium heat. Take sauce off the stove and mix soda and vanilla together, then add to sauce. Pour caramel sauce over the popcorn (easiest if warmed popcorn is in a large bowl). Make sure that sauce is spread through the popcorn and then return popcorn to a cookie sheet and put into the oven for 45 minutes at 250º. Stir the caramel corn when it has cooked for about half the time. Enjoy!
