1 1/2 tsp. salt
1 1/2 tsp. pepper
2 Tbsp. chili powder
1 tsp. crushed bay leaf
4 lbs. beef brisket, trimmed of fat

Barbeque Sauce:
1 c. ketchup
1/8 tsp. salt
1 c. water
1/2 c. cider vinegar
1 tsp. sugar
1 tsp. paprika
1 tsp.chili powder
2 Tbsp. chopped onion
3 stalks celery, chopped
4 Tbsp. Worcestershire sauce
3 bay leaves
1 medium clove garlic, minced
pinch of pepper

Directions:
Directions:
Mix first four ingredients. Place beef brisket fat side up, in a Dutch oven. Sprinkle seasonings over top. Bake covered for about 4 hours at 275º. Remove from oven and scrape off seasoning mixture. Cut into thin slices.

Before brisket is done, combine barbecue sauce ingredients in a large saucepan. Bring to a boil then siommer for 15 minutes. Strain and pour over thinly sliced brisket.
