4 half chicken breast, skinned & boned (or use boneless)
2 - 14oz. Italian style stewed tomatoes
2 T. cornstarch
1/2 tsp. oregano or basil, crushed
1/4 tsp. hot pepper sauce (optional)
1/4 c. grated parmesan cheese

Directions:
Directions:
Place chicken in baking dish sprayed with cooking spray. Bake covered 425º for 15 minutes (longer if needed, should be almost cooked), drain juices. Combine tomatoes, corn starch, oregano, hot pepper sauce in a pot and cook, stirring constantly until thickend (blend it first if your family doesn't like it chunky). Pour heated sauce over chicken. Top with cheese. Bake 5 minutes uncovered, or until thoroughly cooked. Garnish with parsley.
Serves 4.
