1 c chopped onion
4 tbsp butter or margarine
3 c diced cooked potato
3 c diced cooked corned beef
salt, pepper and paprika
fried or poached eggs,
pickles or
catsup (optional)

Directions:
Directions:
Cook onion in 1 tbsp butter over low heat until soft and golden. Put in large saucepan. In 2 tbsp butter in hot skillet, saute potato until crisp. Add to onion. In remaining butter, quickly brown beef. Mix carefully with potato and onion. Season and heat.
