1 pound pinto beans
1 large chopped onion
1/4 c oil
3 pounds spareribs
1/2 tsp thyme
1 bay leaf
salt and pepper

Directions:
Directions:
Rinse and soak pinto beans overnight, or cover with hot water and soak 2 hours. Bring to a boil, then simmer several hours or until tender. Drain and save cooking water. Cut up spareribs, season with salt and pepper, and broil 20 minutes or until brown on both sides. Saute onion in cooking oil, then combine with spareribs, beans, thyme and bay leaf in a casserole. Cover with original cooking water and bake in a moderate oven, 350º about 1 hour or until spareribs are tender. Additional water may be added while baking, if beans become too dry.
