6 Cups vegetable oil
4 Large Idaho Potatoes, peeled and cut into 1/4 inch fries
1 Recipe Bbq Spice: see below

5 tbls Hungarian paprika
2 tbls Old Bay Seasoning
1 tbls chili powder (pastille, negro, or habannero)
2 tbls brown sugar
3 tbls kosher salt
1 tsp cumin, ground
1 tsp coriander, ground
1 tsp thyme, ground
2 tsp garlic powder
2 tsp onion powder

Directions:
Directions:
In a heavy bottomed pot, preheat oil to 350 degrees. Add the potatoes and fry until golden brown, about 5 to 7 minutes. Transfer toa large bowl and toss with Bbq Spice.

Place all spice ingredients in a food processor and pulse until everything is very well combined and almost pulverize. Sprinkle desired amount over hot fries and toss well.
