4 pounds beef brisket, water to cover
1 carrot, diced
1/2 c diced celery
6 peppercorns
6 whole cloves
2 tsp salt
1 egg slightly beaten
1/2 c dry bread crumbs.

Onion Sauce:
1/4 c sugar
2 tbsp drippings, lard, shortening
4 medium onions, thinly sliced
2 tbsp flour
2 c strained meat stock
2 tsp vinegar
2 tsp salt

Directions:
Directions:
Cover meat with water. Add vegetables and seasonings. Cover and simmer about 3 to 4 hours until tender. Remove from stock and place in shallow baking dish. Strain stock to remove vegetables. Spread beaten eggs over meat. Sprinkle with crumbs and brown in moderate oven, 350º about 15 minutes. Serve with hot Onion Sauce.

Onion Sauce: Brown sugar slowly in lard or drippings. Add onions and cook until tender. Add flour and brown slightly. Add stock, vinegar and salt. Cook, stirring constantly, until thickened. (2 1/2 cups)
