Rub:
1/2 oz. pepper
1/2 oz. garlic powder
1/2 oz. onion powder
7 oz. salt

1 pork butt - heavy fat removed
1 oz. minced garlic stuffed in several holes (top and bottom) of pork butt

1 small can crushed pineapple
1 small container frozen orange juice (add water to make juice)

Directions:
Stuff holes of pork butt with garlic and rub. Then rub entire roast. Place in bowl with crushed pineapple and frozen orange juice. Seal, shake and refrigerate for 12 to 24 hours. Flip at least once.
Put in smoker grill for 3 to 4 hours with preferably apple wood. After smoking continue cooking in oven 3 to 4 hours at 300 degrees until meat reaches 180 degrees. Let cool and pull with fork or chop. Add your secret BBQ sauce with a little extra chopped onion. Mix well with meat and continue in roaster to serve or refrigerate and then reheat until sauce and onion is cooked together with meat.
