3 1/2 lbs. of wingettes
1 1/2c. of Frank's hot sauce
1/2c. of fresh lemon juice
1/4c. of Canola oil
2T. of Worcestershire sauce
4 cloves of garlic finely minced
2 tsp. of kosher salt
2 tsp.of freshly ground black pepper
1/2c. of honey
1/2c. of frozen orange juice concentrate, slightly thawed
1T. of granulated garlic
1 tsp. of freshly ground black pepper
1 tsp. of granulated onion

Prepare the marinade by putting 1/2c. hot sauce, lemon juice, canola oil, Worcestershire sauce, garlic, salt and 1 tsp. pepper into a food processor to blend.
Put the wingettes into several heavy duty Ziplock bags and pour marinade into each. Be sure to cover the wingettes. Put bags in refrigerator and marinate for 12-24 hours . Every few hours rotate the bags and massage the marinade into the wings. Discard marinade after use.
1st BBQ..Barbecue over indirect low to medium heat with hickory chunks for smoke. Barbeque until juices run clear. Remove from grill and put into refrigerator to cool.
Meanwhile, create a mop sauce by blending 1c. hot sauce, honey, OJ, garlic and remaining tsp. of pepper. together in a food processor until smooth.
2nd BBQ..Set grill for low heat and place pre-cooked wings on grill. Baste wingettes with mopping sauce while cooking, turning frequently. Continue basting until wings are carmelized and crisp.
Serve with Joey's Blue Cheese Sauce and celery sticks.
