2 cups Sugar
1 1/2 cups Vegetable Oil
4 eggs
2 cups All-Purpose Flour
2 tsp Baking Soda
2 tsp ground Cinnamon
1 tsp Salt
3 (4 oz) jars of Carrot Baby Food

Directions:
Directions:
1. Preheat oven to 350º F.
2. Grease and flour a jelly roll pan.
3 Sift together the flour, baking soda, cinnamon and salt. Set aside.
4. In a large bowl, beat sugar, oil and eggs until smooth. Mix in the flour mixture. Stir in the baby food carrots.
5. Spread the batter into the jelly roll pan and bake in the preheated oven for 20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool. Can be frosted with cream cheese frosting if desired.
