1 3/4 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
3/4 cup vegetable shortening
1/2 cup sugar
1/2 cup brown sugar
2 eggs
2 tsp vanilla extract
2 cups shredded zucchini



Topping:
1 T. shortening or margarine
1 cup powdered sugar
1 T. milk
1/4 tsp. ground cinnamon

Preheat oven to 350º. Lightly grease a 13X9 inch baking pan. In a large bowl, cream the shortening and sugars. Beat in the eggs and vanilla. Add the zucchini and gradually blend in the dry ingredients. Spread the batter evenly in the pan and bake for 30 to 35 minutes, or until a toothpick comes out clean. Cool in the pan on a wire rack. Make the topping by creaming the shortening and sugar then add the milk and cinnamon. Spread the topping over the cooled bars. May sprinkle with chopped nuts if desired. Cut into bars.
