1 lb. Asparagus, ends trimmed and cut into 1" pieces
1 cup sliced mushrooms
1/2 cup chopped onions
8 large eggs
1 cup shredded mozzarella, divided
1 cup shredded Swiss cheese, divided
1/2 cup grated parmesan cheese
1/2 cup crumbled feta cheese
1 tbsp. Dijon mustard
1/2 tsp. Salt
1/2 tsp. Ground black pepper
1/4 cup Green onions, chopped

1. Preheat oven to 350º.

2. In a medium bowl, whisk eggs and add 1/2 c. mozzarella, 1/2 c. Swiss, and 1/2 c. Parmesan cheese. Whisk to combine. Add salt , pepper, and mustard. Set aside.

3. Melt butter in a skillet over medium heat.

4. Add chopped asparagus, mushrooms, and onions and saute until tender, about 5 minutes.

5. Stir in the egg mixture, folding gently to combine with the veggies. Cook until almost set.

6. Pour into quiche or pie plate, sprinkle with remaining mozzarella and swiss cheeses. Sprinkle feta cheese and green onions on top.

7. Bake in the retreated oven until frittata is cooked through and cheese begins to turn lightly golden.

8. Remove from oven and let sit 20 minutes before cutting into wedges and serving.
