1 3/4 cup all purpose flour
1/2 cup sugar
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1/4 cup butter (melted)
1 tbsp. vanilla
1 medium zucchini (grated)
3 ripe bananas (mashed)
2 eggs
1 cup chocolate chips (optional)

1. Preheat oven to 350º
2. Add bananas to a large bowl & mash with a fork
3. Add grated zucchini, eggs, vanilla, and melted butter
4. Add dry ingredients to a separate bowl: flour, sugar, baking powder, baking soda, cinnamon, and salt. Stir dry contents to combine
5. Slowly pour the dry ingredients into the larger bowl with the wet ingredients while simultaneously mixing it all together-do not overmix
6. Add chocolate chips to mixture and stir (if desired)
7. Either spray muffin tin with non-stick spray or use cupcake liners
8. Scoop batter into muffin tin and fill each cup about 3/4 full
9. Transfer into oven and bake for 25-30 minutes, check with a toothpick to be safe
