2 cups water 110°
2 teaspoons active dry yeast
1 teaspoon sugar
2 teaspoons salt
4 1/2 cups flour, all purpose, or bread, flour

Pre Heat oven to 475º.

2 Cups 110º water. Add 2teaspoons yeast & 1 teaspoon sugar & set aside to bloom for at least 5 minutes.

Measure out 4.5 Cups of flour in bowl. Add 1 teaspoon salt.
Add yeast mixture to dry ingredients. Mix a little at a time. GENTLY mix. It will look shaggy & craggy. Don’t over mix.
Cover either tea towel & put in warm place for about 90 minutes.

Put a little flour down. Put flour on hands & gently put dough on counter.

Put a little flour on top. Gently fold over itself 4 times.

Cut dough in half.
Roll out to size of pan. Twist & set into pan.
Cut 3 slices gently on top
If dough with knife.
Cook for 25 minutes. Put into 475º. Half way through (12 minutes) cooking turn oven down to 450º.
