2 chicken breasts, grilled and sliced
4 large tortillas
1 cup shredded lettuce
1/2 cup shredded carrots
1/4 cup red or green bell pepper, thinly sliced
1/4 cup cucumber, thinly sliced
1/4 cup fresh cilantro, chopped
1/2 cup roasted peanuts, chopped
4 green onion stalks

For the Thai dressing:
3 tablespoons lime juice
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon sesame oil
1 teaspoon grated fresh ginger
1 teaspoon garlic powder
1 tablespoon water (to adjust consistency)

In a small bowl, vigorously whisk together the lime juice, soy sauce, honey, sesame oil, ginger, garlic powder, and water until the dressing looks smooth and glossy. (Duration: 2 minutes)

Lay the tortillas flat on a clean surface and lightly spread a thin layer of the Thai dressing across each one.
Layer the grilled chicken, shredded lettuce, carrots, red bell pepper, green onion, cucumber, and cilantro neatly into the center of each tortilla.
Sprinkle with chopped peanuts to add that irresistible crunch in every bite.
Fold in the sides of the tortilla, then roll it up snugly to create tight, hand-held wraps.
Use extra dressing for dipping sauce.
