Marinade
1 large egg
1 tbs soy sauce
½ tsp light brown sugar
1 ½ lbs boneless skinless chicken thighs or breasts

Sauce
¼ c soy sauce
½ c light brown sugar
¼ c distilled white vinegar
¼ c orange juice (one orange squeezed)
1 c chicken broth
2 tbs cornstarch
1 ½ tsp sesame oil
¾ tsp red pepper flakes

For cooking
Vegetable oil
1 tbs ginger – freshly minced
3 cloves minced garlic
4 scallions sliced thin
Rice for serving

Marinate the chicken - in a large bowl beat the egg with soy sauce and sugar. Add the chicken pieces and toss to coat evenly. Let sit at room temperature for 20-30 min.

Sauce - Mix soy sauce, sugar, vinegar, orange juice, chicken broth, cornstarch, sesame oil and red pepper flakes. Set aside.

Coat the chicken. In another bowl, whisk the cornstarch, flour, baking soda.
Sprinkle the mixture over marinated chicken and toss until pieces separate and look dry and clumpy.

Fry Chicken: In a large skillet, heat about ¼ inch oil over medium high heat to 350º. In 3 batches, fry chicken until golden brown, 4-5 minutes, flipping once. Transfer to paper towel lined plate.

Sauce- Drain and wipe out skillet then add about 1 tbs fresh oil, medium heat. Add ginger, garlic, and scallion whites for 30 seconds. Stirring constantly, don’t let them brown.

Stir sauce mixture again and add to the pan. Let simmer and thicken 2-3 minutes. Add chicken to the sauce and toss until coated.
