Ingredients:  
1-2 lbs. lamb chunks, cut in small pieces
1 onion, chopped
1 green apple, peeled, cored, chopped
¼ dried apricots, chopped
1 Tbls. curry powder
1-2 Tblsp Patuks Curry Paste (mild or hot)
½ tsp. cumin
½ tsp. coriander
1 cup pineapple juice
1-2 small containers of plain yogurt
1-2 Tbls. parsley, chopped

Directions:
Directions:
Saute onion for a few minutes than add chopped apples, apricots stirring occassionally until softened. Add geneerous amount of curry powder, cumin and coriander. Stir to combine. Add curry paste, stir for a minute and add juice and chopped lamb and cook through until done. Stir often so spices don't burn. Turn of heat and add yogurt with a handful of chopped parsley. Don't boil or yogurt will become grainy.

Serve with rice.
