2½ cups cooked, cubed ham
½ pound shelled, deveined raw shrimp
5 slices bacon, cooked and crumbled
1½ cups long grain rice, uncooked
1 medium onion, minced
1 medium green pepper, diced
1 clove garlic, crushed
1 can (15ounce) tomatoes
1 can (13¾ ounce) chicken broth
1 bay leaf
½ teaspoon salt
½ teaspoon thyme leaves
3 to 4 drops hot pepper sauce, or to taste

In large skillet over medium heat fry bacon; drain, crumble and set aside.

In bacon drippings, cook rice, onion, green pepper and garlic until rice is slightly brown.

Stir in the tomatoes with their liquid, chicken broth, bay leaf, salt and thyme.

Cover and cook 15 to 20 minutes. Stir in the ham, shrimp and hot sauce.

Cook about 15 to 20 minutes until rice is tender,

Serve on warm platter and top with crumbled bacon.

You can substitute chicken for the shrimp. Just cube approximately 3 chicken breasts and sautê lightly before adding with the ham.
