For the Sausage & Potatoes:
5 large smoked sausages (pork or beef)
1 ½ lbs baby Yukon Gold potatoes, halved
4 slices bacon, diced
2 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp smoked paprika
½ tsp dried thyme
2 tbsp fresh parsley, chopped (for garnish)

For the Honey Garlic Glaze:
⅓ cup honey
3 cloves garlic, minced
¼ cup soy sauce
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
½ tsp red pepper flakes (optional)
Directions:
Directions:
Set oven to 400°F.
Prepare the potatoes.
Toss halved potatoes with olive oil, salt, pepper, paprika, and thyme. Spread in a large oven-safe skillet or baking dish.
Add bacon & sausage.
Sprinkle diced bacon over the potatoes. Nestle the sausages between the potatoes.
Bake.
Roast for 25–30 minutes until potatoes are fork-tender and sausages are browned.
Make the glaze.
In a small saucepan, combine honey, garlic, soy sauce, Dijon, vinegar, and red pepper flakes. Simmer 3–4 minutes until slightly thickened.
Glaze & finish.
Brush sausages generously with the honey garlic glaze. Return to oven for 5–7 minutes until glossy and caramelized.
Serve.
Spoon extra glaze over everything and garnish with fresh parsley.
