1 cup finely shredded cheese (cheddar works great; mozzarella or pepper jack also melt well)
2 large eggs

(If you prefer a firmer texture, you can use 3 eggs)

Some optional add-ins:

Chopped green onions
Diced jalapeños
Garlic powder
Cooked bacon bits
Crumbled sausage
Spinach or other veggies

Preheat your waffle iron
Heat a regular or mini waffle iron to medium-high heat. Lightly grease if needed.

Mix the batter
In a bowl, whisk together the eggs and shredded cheese until fully combined.
Stir in any optional add-ins.

Cook the chaffles
Pour enough mixture into the waffle iron to fill it without overflowing.
Cook for about 4–5 minutes, or until golden brown and fully set.

Repeat & Serve
Repeat with remaining batter.
Let cool slightly (they crisp up as they cool), then top and enjoy!

Use your imagination and put just about anything in a chaffle!
Make them savory with ham & cheese, pizza toppings, taco fillings Top with avocado, sour cream, or salsa.
Add herbs (Italian, ranch, etc.)
Spicey! Add pepper jack, hot sauce, jalapenos)
You can even add a little sweetener and cinnamon and top with berries!
We mostly use them as bread for sandwiches but can also use as a pizza crust.
