6oz oats 3oz flour
1tsp baking soda 1/4 tsp baking powder 1/4 tsp salt
1/2c butter 8oz sugar 2 lg eggs
1/2 tsp vanilla 1 c mashed banana

Directions:
Directions:
Heat oven to 350º

Spread oats onto a half sheet pan and bake 15 min until lightly toasted. Cool oats slightly for 2-3 minutes

Coat a 9x5 in loaf pan with a non-stick spray or butter and set aside

Pulse the toasted oats in a food processor until flour like
Add the flour, baking soda, baking powder and salt. Pulse 2-3 times and set aside.

Combine butter and sugar and mix on medium speed for 2-3 min until light in color, scraping the sides of the bowl as needed.

Reduce mixer speed to lowest and add eggs one at a time, making sure each egg is fully incorporated before adding the next. Scrape sides as necessary.

Add the vanilla and banana and mix on med-low to combine. Batter will look curdled.

with mixer on lowest speed, slowly add flour mix until combined.

Pour batter into pan(s)

Bake 50-55 min or until internal temp is between 200-210

Cool 15 min in pan then run spatula on sides and turn out onto rack to cool completely.
