1 1/2 cups +1 tablespoon all-purpose flour
1/2 cup wheat flour
1/2 cup currants
2 teaspoons caraway seeds
2 teaspoons grated lemon zest
1 teaspoon baking soda
1/2 teaspoon
1 cup buttermilk
3 tablespoon tablespoons honey
1 teaspoon sugar

Preheat oven to 350°: spray a baking sheet with nonstick cooking spray.
In a large bowl, combine both flours, currents, caraway, seeds, lemon zest, baking soda, and salt. In a small bowl combined the buttermilk and honey. Pour over the flour mixture; stir until the flour disappears. Do not over mix.
Lightly sprinkle a work surface with flour; turn out the dough. Flour your hands and knead the dough lightly 7 times. Form into a 7” round loaf; place on a baking sheet. With a knife, slash a cross on the top and sprinkle with the sugar. Bake in the upper 1/3 of the oven until brown, approximately 40 - 45 minutes. Remove from the pan and cool completely on a rack.
