1 ½ cups all-purpose flour

3/4 cup white sugar

1 teaspoon baking soda

1 teaspoon salt

1 large egg, beaten

1/3 c cup light mayonnaise

4 ripe bananas, mashed

1 teaspoon vanilla extract

Directions:
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.

Whisk flour, sugar, baking soda, and salt together in a medium bowl. Stir egg, mayonnaise, bananas, and vanilla extract together in a large bowl until well combined. Stir flour mixture into banana mixture until no dry lumps remain. Pour batter into the prepared loaf pan.

Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

**Takes about 50 minutes in our oven. I blended wet ingredients with an immersion blender.

Terry loves banana bread but after his heart attack stayed away from it. This recipe allows him to enjoy it again!
