Ingredients: 1/2 c. Minute rice 4 oz. flank steak, very thinly sliced into bite-size strips 2 t. olive oil 4 oz. fresh broccoli, cut into bite-size pieces Stir Fry Sauce: 1/4 t. fresh ginger, grated 1/2 t. garlic, grated 1 T. hot water 2 T. soy sauce 1 T. brown sugar 1 t. corn starch Dash of black pepper

Directions:1. Cook rice by bringing 1/2 cup water in a coffee cup to a boil in the microwave. After it has come to a boil, add rice, stir and cover. Set a side. 2. Combine all the sauce ingredients together in a bowl. Stir to dissolve sugar and corn starch. 3. In a medium saucepan add 2 t olive oil over medium heat Add broccoli and saute' for 4 to 5 minutes, till broccoli is a bright green and crisp-tender. Stir often. Remove from saucepan to a bowl. 4. Add sauce to saucepan and bring to a boil over medium heat. Stir till it thickens. Add 1 or 2 T. water if too thick. 5. Once sauce is the consistency you want add broccoli and steak. Stir till everything is coated in the sauce and heated through. 6. Serve over cooked rice. |
