1 cup sugar
2 tsp soda
1tsp cinnamon or apple pie spice

2 cups shredded carrots
½ cup coconut
½ cuo chopped walnuts
½ cup crushed pineapple
1 apple peeled and shredded

3 eggs
⅔ cup butter or oil
½ cup raisins

Mix dry ingredients

Add all shredded fruit and vegetables to flour mixture. Make sure that everything is coated
Mix eggs and oil in separate bowl, beat
Add egg mixture to flour mixture stir gently.

Grease muffin tin and fill ⅔ full with batter

Bake 350° fro 20-30 minutes or until straw comes out clean

Here's a recipe Vicki found when she 1st tasted these muffins, previously sold at Mcdonald's. Mom fell in love with these.

They can be made ahead and stored in freezer for company. This not a soft muffin but is dense and full of flavor
