⅔ cup coconut oil
2⅔ cups of sugar
4 eggs
⅔ cup water
3⅓ cup flour
2 teaspoons baking soda
1½ teaspoon salt
½ teaspoon baking powder
1 teaspoon cinnamon
3 cups shredded zucchini
2 teaspoons vanilla

Directions:

Preheat oven to 350º

Mix dry ingredients separately
Mix coconut oil and sugar, then add eggs and water, then zucchini.

Add dry ingredients to the wet and mix well.


Pour into mini loaf pans sprayed with cooking oil.
Bake for 45 minutes. Check for doneness with toothpick

Use same recipe and replace zucchini with 1 can (16 oz.) pumpkin puree.
