1 cup wheat bran
1 cup buttermilk
1/3 cup vegetable oil
1 egg
2/3 cup brown sugar, packed
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup raisins or chopped nuts (optional)

Preheat Oven: Preheat your oven to 375°F (190°C). Grease or line a muffin tin.
Soak Bran: In a bowl, combine wheat bran and buttermilk. Let it soak for 10 minutes.
Add Wet Ingredients: Stir in vegetable oil, egg, brown sugar, and vanilla extract into the bran mixture.
Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
Mix In Dry Ingredients: Add the dry ingredients to the wet ingredients, stirring until just combined. Fold in raisins or nuts if desired.
Fill Muffin Cups: Spoon the batter into muffin cups, filling each about two-thirds full.
Bake Muffins: Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
