1 lb sweet Italian sausage
bag of frozen organic spinach
chopped garlic
chopped onions
sliced baby portobello mushrooms
butter
EVOO
shredded cheddar cheese (Trader Joe's unexpected cheddar tastes the best)!
sour cream
corn chips




Directions:
Directions:
Sauté garlic, onions, and mushrooms in EVOO and butter in a large pan. Set aside.

Sauté Italian sausage in the same pan. Add defrosted spinach and the other sauteed vegetables to the sausage.

Once all ingredients are hot, sprinkle shredded cheddar cheese on top.

Load into pita bread.

Serve with a dollop of sour cream and corn chips.

A family favorite and a yummy way to get your green vegetables and mushrooms into your diet especially in Winter!

You can make many variations of this dish! Be creative!

Add mixed vegetables, snap peas, or corn. If you like things a little spicier, add some peppers or hot sauce.
