Ingredients: ▢2 lbs lean ground beef ▢½ onion diced ▢1 packet taco seasoning ~1 oz ▢15 oz Rotel (tomatoes and green chilis) drained ▢4 cups cheddar cheese shredded, divided ▢20 corn tortillas ▢cooking oil

Directions:Preheat oven to 425℉. Heat a deep sided skillet over medium heat. Once hot, drizzle with cooking oil and saute onions for a couple of minutes. Add ground beef to the skillet. Break into small pieces as it cooks.
Once cooked through, drain any excess grease. Add taco seasoning and Rotel to the beef. Stir well. Add 1 cup shredded cheese. Stir until completely melted. Remove from heat. Working in batches, cover corn tortillas with damp paper towel and heat in microwave for 30 seconds. Brush one side of the corn tortilla with cooking oil. Flip over. Place beef and shredded cheese one one side of the tortilla and fold it over to make a taco. Repeat until pan if filled with tacos. You may need to use two cooking sheets to fit all of the tacos. This will yield around 20 tacos. Bake 10-12 minutes or until tortillas are crispy. Serve and enjoy! |
