2 pounds ground beef, browned
1 box manicotti shells
2 eggs, beaten
2 cups mozzarella cheese, grated
6 slices moist white bread
1 cup milk
½ teaspoon garlic powder
3 Tablespoons grated parmesan cheese
1 teaspoon Italian seasoning
1 teaspoon salt
½ teaspoon black pepper

SAUCE:
¼ diced onions
2 Tablespoons vegetable oil
1 6 ounce can tomato paste
1 pint diced tomatoes with the liquid
½ teaspoon minced garlic
1 teaspoon Italian seasoning
1 teaspoon salt
1 bay leaf
1 cup water
½ cup mozzarella cheese

Directions:
Directions:
Preheat oven too 350º. Prepare a 9 x 13 pan with cooking spray.
Cook manicotti shells by package directions, being careful not to overcook. Set aside to cool. Combine beef, eggs, 1 cup mozzarella, bread, milk and spices. Mix well to make the meat filling. Reserve ¾ cup of the meat filling. In a saucepan, sauté the onions until translucent. Add the sauce ingredients and boil 10 minutes over medium heat. While sauce is cooking, carefully fill the shells with the meat filling taking care not to split them. Place side by side in the baking dish.
Pour the sauce evenly over the shells and pour the reserved meat filling over the top of the shells. Sprinkle with mozzarella and parmesan cheese across the top. Bake for 25 to 30 minutes or until browned.½

My daughter, Maridell, won several cooking contests with this recipe when she was in high school. It is quite a process, but it doesn't disappoint. You can shorten the prep time by using prepared marinara sauce.
