2 cups all-purpose flour
1 ½ teaspoon baking powder
½ teaspoon baking soda
⅓ cup sugar
½ cup butter, room temperature
2 eggs
2 Tablespoon half-and-half
1 15-oz. can tomatoes with green chiles, drained well (Rotel, etc.)
6-8 slices thick-sliced bacon, cooked and chopped
6 0unces cubed cheddar cheese
2-4 ounces shredded cheddar, optional

Preheat oven to 350˚F. Lightly grease a 9"x5" loaf pan.
Sift together flour, baking powder, and baking soda.
Combine sugar and butter in the bowl of an electric mixer. Beat until light and fluffy. Add eggs, one at a time, along with half-and-half.
Fold in dry ingredients, tomatoes, bacon, and cheese cubes. Scrape into prepared loaf pan.
Bake 60-65 minutes, or until toothpick inserted in center comes out clean.
Optional: after bread has baked 30 minutes, top with shredded cheese and then continue to bake the remaining 30-35 minutes.

Cool about 10-15 minutes before slicing
