2 cups grated carrot or zucchini, or combo
¾ cuo sugar
2 eggs, lightly beaten
½ cup oil
2 tsp vanilla
2 cups flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 cup raisins

Preheat oven to 325º.
Grease muffin tins.
In large bowl, combine apple, grated vegetables, and sugar.
Add eggs, oil, vanilla and beldn.
In another bowl, combine dry ingredients.
Mix dry into wet ingredients and add raisins.
Fill muffin tins ¾ full.
Bake about 25 minutes.
Per serving 147 calories and 6 grams fat
