Ingredients: Apple Mixture 1 ½ cups (180g) peeled & chopped apples (1/2 inch chunks; you need about 2 medium apples) ⅓ cup (67g) packed light or dark brown sugar 1½ teaspoons ground cinnamon
Batter 1 ¾ cups (219g) all-purpose flour (spooned & leveled) 1 teaspoon ground cinnamon ½ teaspoon ground nutmeg 1 teaspoon baking powder ½ teaspoon baking soda ¼ teaspoon salt ⅓ cup unsalted butter, softened to room temperature ¾ cup (150g) granulated sugar 2 large eggs, at room temperature ½ cup (80g) unsweetened apple butter 1 teaspoon pure vanilla extract ½ cup (120ml) whole milk, at room temperature

Directions:Preheat oven 350ºF Mix apple mixture and set aside Prepare a loaf pan with parchment paper Sift together dry ingredients in a large bowl Beat on medium-low spreed butter and sugar for 3 minutes or until it's light and fluffy. Add apple butter, eggs and vanilla. Mix in half dry ingredients and half milk. Repeat with remaining ingredients. Mix well. Stir in apples. Pour into prepared pan. Bake 60-75 minutes (after 30 minutes cover sides and perimeter loosely with foil if necessary to prevent load getting too dark) Cool |
