Prepare the rack by removing just a thin layer of the fat cap. Leave most of it there. Lightly coat the rack on both sides with extra virgin olive oil. Rub the seasoning on both sides of the racks. You can make small slits in the fat cap and slide in sprigs of rosemary and fresh garlic, cook over hot charcoal grill, mind the flames. Fat cap first about 4-5 minutes, then flip and cook the bone side about 3 minutes. Stay with the meat as it cooks to avoid burning it. Pull off grill, cover and let it sit about 10 minutes. Serve with asparagus and Risotto.
