1 beef rump roast
28 oz Mozzarella
14 oz diced bacon
Olive Oil
6 garlic cloves minced
parsley
Salt and Pepper

Directions:

1. Preheat oven to 200

2. Take your rump roast cut a slit in the middle creating a pocket don't slice all the way through but almost to the other side, then turn meat inside out.

3. Fry up your bacon to you desired crispiness, and then dice it up.

4. Mix the Mozzarella and bacon together until well blended, and stuff into the pocket that you created.

5. Take your shallow dish big enough to hold your roast pour in olive oil an minced garlic along with the parsley, take your roast and roll the roast to coat it well with the olive oil and garlic.

6. Place on a baking sheet cook for 1 hour slice and serve.
