3 c canola oil for frying
½ c all-purpose flour
5 T granulated sugar, divided
½ tsp baking soda
¾ tsp cinnamon, divided
¼ tsp salt
⅛ tsp ground nutmeg
1 large egg
¼ c milk
½ T butter, melted

Directions:
Preheat oil on medium heat, to about 350º (using a thermometer) in a deep small frying pan or deep medium-sized saucepan.

For coating, mix 3 T sugar and ½ tsp cinnamon in a shallow container. Set aside.

For dough, mix together flour, 2 T sugar, baking soda, ¼ tsp cinnamon, salt, and nutmeg. Set aside. In another bowl, whisk together egg, milk, and butter, until combined. Pour wet ingredients into dry ingredients, and mix well until dough forms.
Form 1 Tablespoon sized balls or pat dough out on a lightly floured surface to 1/4” thickness and cut with a doughnut hole cutter. Carefully place dough in hot oil. Brown both sides by flipping the holes over, after first side is brown (roughly 2 min). Remove doughnut holes with a slotted spoon, and place on paper towel lined plate. While still warm, roll in sugar cinnamon mixture.
