Ingredients: |
Ingredients: 3 cups sifted flour 1 tsp. salt 1 tsp. baking powder 3 Tbsp. lard or shortening 1 c. hot water

Directions: |
Directions:Preheat a griddle (preferably cast iron) on medium heat.
Combine all the ingredients and mix together until a dough ball is formed.
Once the dough ball is formed, knead the dough for a couple of minutes.
Divide into 8 dough balls and cover with plastic wrap. Let sit for at least 15 minutes.
Roll out each dough ball to the size you prefer. I aim for about 9 inches in diameter.
Place each tortilla on the griddle and cook for about one minute on each side - until the tortilla gets several brown spots each side and is no longer translucent.
Place the cooked tortillas under a towel to keep warm until served.

Notes: Tessa's mom was lucky enough to grow up in a house where fresh, homemade tortillas were made for dinner at least once per week. She has carried on this tradition in her own family. Tessa loves homemade tortillas - especially when they are hot off the griddle with a nice spread of butter!
