1 c. applesauce
1 c. light brown sugar ( I used ½ c. honey & ½ c. Splenda® brown sugar)
½ c. butter, melted and cooled (I used coconut oil) 2 large eggs
1 tsp. vanilla extract
1½ tsp. cinnamon,
1 tsp. baking soda
2 c. all-purpose flour
¼ c. raw sugar & 1½ tsp. cinnamon

Preheat oven to 350º. Grease or line 24 muffin tins with paper liners and set aside. In a large mixing bowl, combine the applesauce, brown sugar, melted butter, eggs and vanilla extract and whisk to combine. In a separate bowl, add the cinnamon, baking soda and flour and whisk. Add the dry ingredients, raisins & nuts to the wet ingredients and fold together using a rubber spatula until well mixed. Using an ice cream scoop or a spoon, scoop the batter into the prepared muffin tins, filling them about 3/4 of the way full. Combine raw sugar and remaining cinnamon. Sprinkle on top of muffins. Bake for 22-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
