1 lb. ground beef
3/4 cup oatmeal
1 egg
1/2 cup milk
1/2 cup celery, sliced
1/2 cup onion, chopped
2 squirts ketchup
2 tablespoons butter
1 tsp each salt and pepper

Topping:

1/4 cup ketchup
1 tsp mustard
2 tablespoons brown sugar

Directions:
Directions:
Preheat oven to 350 degrees.

Grease or spray with cooking spray and 8 x 8 or 9 x 9 inch pan.

Melt butter in a small skillet, add celery and onion and sauté until slightly softened. Set aside to cool a bit.

In a large bowl combine ground beef, oatmeal, egg, milk, ketchup, cooled celery and onion mixture, salt and pepper.

If the mixture seems dry add a bit more milk, if it seems too wet, add a bit more oatmeal.

Transfer the meatloaf mixture to the prepared pan and shape into a loaf.

In a small bowl mix topping ingredients and spread oven the meatloaf.

Bake for 50 to 60 minutes. If it appears to be getting too brown, top with a sheet of foil to finish baking.

I sometimes use chopped green pepper in place of the celery. Using celery, onion and green pepper together would be yummy also.

Serve with mashed potatoes and corn.
