3 tbsp oil
1 onion, finely diced
1 green pepper, finely diced
2 cloves garlic, crushed
6 plum tomatoes, finely diced
1/2 tsp salt

Directions:
Directions:
In a 2-3 quart pot, heat the oil, and saute the onion until soft.
Add the pepper and garlic and saute for an additional 3-5 minutes.
Add the tomatoes and salt.
Cover and bring to a boil.
Lower the heat and then simmer for an hour.
Raise the heat to medium and cook for another 1.5 - 2 hours, mixing every 10 -15 minutes, until all the liquid has boiled down.
Serve chilled.
