2¼ teaspoon instant rise yeast
3¼ cups flour
¼ and 2 TB sugar
1 tsp salt
4 Tb oil
3 eggs, separated
1 cup water

Directions:
Sift together flour, ¼ cup of sugar and salt. In a bowl bloom yeast with the warmed water and 3 TB of sugar. When foamy, amix with the egg yolks and oil. Add to the dry. Mix with a dough hook on the stand mixer until smooth and elastic. You can alternately mix with a spoon and knead with your hands if you don't have a stand mixer. Divide the dough into 3 equal parts and let rise on a greased plate for 1 hour.
Roll each section into a long log of equal lengths about 18 inches. Braid the three pieces together and pinch the ends, tucking them under the loaf. Transfer to a baking sheet. Brush with the egg whites. Preheat the oven to 350º F.
Let the loaf sit and rise a second time about 30 minutes. Brush with additional egg white again. Bake about 30 to 45 minutes depending on the size. The crust should be golden and sound hollow when tapped. Let cool on a wire rack for as long as you can stand until you can wait no longer.
