1/2 cup quick cook oats
1/2 cup orange juice
1 1/2 cup flour
1/2 cup sugar
1/2 cup vegetable oil
1 egg, beaten
1 1/4 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/4 tsp cinnamon
2 tsp sugar
1 cup blueberries

Directions:
Directions:
In a small bowl mix the oats and orange juice and set aside. In a medium bowl, mix flour, sugar, baking powder, baking soda, and salt then thoroughly blend in egg and oil. Stir in oat mixture. Fold in blueberries and pour into muffin cups. Mix sugar with cinnamon and sprinkle over top of muffins. Bake at 400ºF for 18-20 minutes or until knife comes out clean.
