Ingredients: 1 cup Italian bread crumbs (or just make your own!) 3/4 cup Romano or Parmesean grated cheese 1/2 cup milk 1/2 cup beef broth 1/2 cup fresh parsley, chopped 3 eggs 2 lbs ground beef 1 lb ground pork 1 lb ground veal Oregano, Minced Garlic, Kosher salt, ground pepper, Dried Basil, crushed red pepper flakes, pinch of nutmeg 1-2 cup additional beef broth

Directions:Put all ingredients in a large bowl and mix well with your hands. That's right. Get your damn hands in there and moosh it all up until it's really well mixed. Feel it. Is it too dry? Add some more broth, milk and eggs. Is it too wet and the meat wont form a ball? Add more bread crumb. Smell it. Can you smell the garlic and herbs? Make sure there's enough cheese in there. You don't want bland meatballs! Once you have it right, start making your balls. Make sure they are compact. Place them on a baking sheet with a rim or a deeper baking dish, ensuring they do not touch each other. Pour remaining beef broth in bottom of pan. Bake in 400-degree oven until browned. You'll want to take these out halfway thru and turn the balls, so they cook evenly. You'll have a nice crispiness on the bottoms. If freezing, cool before packing so they don't get soggy. |

Notes: Ok Let's be honest here.. I don't stick to strict quantities here. I 've been making this forever and I eyeball it. Don't stress about it. You'll figure it out! If you like it add some tomato paste. I usually leave this out so I can use these same balls for Zoe's favorite... Swedish meatballs. No tomatoes in that! I make a lot at once and freeze them in separate containers. Makes for about 4 meals or so. Make some larger for subs, some smaller for that Italian wedding soup I am always raving about.
