One large yellow onion, sliced
Butter: 6 tbsp, divided
Olive Oil: 1 tbsp
Dried thyme: 1/2 tsp
One medium head cauliflower, about 1.5 to 2 lbs
2 large cloves of garlic
Flour: 4 tbsp
Whole Milk: 3 cups, about 700 ml
Mustard powder: 1/2 tsp
Salt : 1/2 tsp
Smoked Paprika: 1/4 tsp
Black pepper: 1/4 tsp
Ground nutmeg: 1/8 tsp
Cayenne pepper: a pinch ( about 1/8 tsp)
Yukon gold or russet potatoes, slice thinly ( 1/8 inch thick) enough to cover the bottom of your baking dish
Cheddar cheese: 2 1/2 cups for the sauce and 1 cup for topping
Soft cream cheese: 2 tbsp, at room temperature
Minced parsley for garnishing
