1/4 C bacon fat (or from frying chicken=fried steak)
1/4 c flour
1 teas salt
dash of pepper (or other non-salt seasoning)

Melt fat...add flour and cook till light brown, stirring constantly. (You are basically making a cream sauce, not much brown and with butter instead of bacon fat, or a roux, lots of brown...it will burn easily so keep stirring.)

Add milk and keep stirring till it thickens. Can be doubled...and leftovers heat up well.
Eggs Goldenrod is basically same recipe doubled and made with butter. Add chopped hardcooked egg whites to gravy and serve over toast or biscuits with grated egg yolk springkled on top. Only tried serving with biscuits instead of toast lately...it's better!!!
