Do ahead of time:
½ tsp yeast
¾ cup flour
½ cup hot water

Add 8 hours later:
1½ cups hot water
1¼ tsp yeast
3¼ cups flour
2 tsp salt

Directions:
Directions:
Mix first 3 ingredients into spongy ball. Cover with plastic wrap and leave at least 8 hours.

Add water, yeast and flour. Mix into a ball (will be slightly sticky). Let set 15 minutes.
Add 2 tsp salt and mix in. Cover and let rise for 30 minutes.
Oil spatula with olive oil and fold dough about 10 times. Cover and let rise another 30 minutes.
Fold another 10 times and let rise an additional 30 minutes.

Once bread has risen 3 times, put about 2 tbsp of olive oil in metal 10 inch round or 9x9 pan. Oil hands, take dough out of bowl gently and put into pan. Carefully spread it a bit. Turn over so it's oiled on both sides. Prick dough with a fork and let rise for 15 minutes.

Heat oven to 500º then lower temp to 450º. Bake 25-30 minutes until golden brown.
If you'd like, top bread with cheddar about 5 minutes before finished. Other good toppings are fresh rosemary, sliced black olives, parmesan cheese or jalapenos.

It sounds complicated, but it is so quick and easy. You need to be around for the risings. Great dipped in balsamic vinegar and olive oil.
