CRUST

1 cup shortening

3–4 cups flour

1 cup water

Salt (to taste)

Note: This recipe makes 6 pasties. Do not double if making more—always prepare one batch at a time.

FILLING

1 ⅓ pounds meat (3:1 ratio of beef to ground pork; use quality meat)

¾ pound onions

2 pounds potatoes

¾ cup rutabagas

Note: Weigh vegetables after cutting.

Roll dough into a log and cut into 6 equal sections.

On a floured surface, roll out one section into a large round.

Place a heaping cup of filling mixture onto the center of the dough.

Season with salt and pepper.

Fold the dough over and pinch the sides together, then roll up the edges to prevent juices from spilling during baking.

Cut slits into the top of the dough.

Place on a baking pan and repeat with the remaining dough and filling.

Bake at 475°F for 30 minutes to seal, then reduce heat to 350°F and bake for another 20–25 minutes.

Once cooled, wrap in foil to freeze.
