2 Tbsp. unsalted butter 2 Tbsp. all-purpose flour 1 cup half-and-half 1 cup grated Parmesan cheese 1/2 tsp. freshly ground pepper 1/4 tsp. kosher salt
Kentucky Hot Browns: 4 thick white bread slices 3/4 lb. sliced roasted turkey 1 cup (4-oz.) shredded Parmesan cheese 3 plum tomatoes, sliced 8 bacon slices, cooked

Directions:Prepare the Mornay Sauce: Melt butter in a heavy saucepan over medium-low heat; whisk in flour until smooth. Cook, whisking constantly, for 2 minutes. Gradually whisk in half-and-half. Increase heat to medium, and cook, whisking constantly, 3 to 5 minutes or until thickened. Remove from heat, and whisk in Parmesan cheese, pepper, and kosher salt.
Toast the bread: Preheat broiler with oven rack 6 inches from heat. Place bread slices on a baking sheet and broil 1 to 2 minutes on each side or until toasted.
Assemble the Kentucky Hot Browns: Arrange bread slices in 4 lightly greased broiler-safe individual baking dishes. Top bread with turkey slices. Pour hot Mornay Sauce over turkey. Sprinkle with Parmesan cheese.
Broil: Broil 6 inches from heat 3 to 4 minutes or until bubbly and lightly browned; remove from oven.
Finish sandwiches: Top sandwiches with tomatoes and bacon. Serve immediately. |

Notes: If. you are looking for a yummy comfort food, this is a good option. I like to cook up a turkey breast and vacuum seal up packages of it for future use in sandwiches, casseroles, etc. I have had this recipe for awhile, wanting to try it and decided today was the day, as I had the ingredients, including turkey breast, all on hand. The Morney Sauce was fab. The Sandwichwas delicious, but very filling. A good winter meal I think!
