3/4 C oil
4 eggs
3 ripe banana’s
2 med sweet potato’s. Cooked and pureed
½ tsp salt
2 tsp baking power
2 tsp cinnamon
1 tsp ginger
3½ cups white flour
1½ cups whole wheat flour
2 cups sugar
⅔ cups milk with 2 tap vinegar
1cup roasted pecans



Praline icing

½ brown sugar
I Tb unsalted butter
1 C roasted pecans
4 C confectionary sugar
1/4 C water






Directions:

Bread
Roast Pecans-in oven for 8 minutes at 350*. Cool.
Blend oil, eggs, bananas, sweet potato. Purée in a large bowl on high for 2 minutes.
Ago salt, baking soda, white flour, cinnamon and ginger. Blend well.
Add milk and vinegar, blend. Add whole wheat flour and roasted pecans.
Pour into 2 loaf pans.
Bake at 350* for 45 minutes.
Makes 2 loafs.
ENJOY










Icing
Cook brown sugar until melted over medium heat. Add butter, cook 2 minutes. Add pecans and remove from heat.
Cool in bowl, add confectionary sugar and half of the water as needed to thin icing.
Remove Sweet Potato Banana Bread from pans, ice
While still hot! Cool and enjoy!º

The Times Picayune at one time had a cookbook contest. It came in the paper every Easter Sunday. I won the bread category one year.
Which was a lot of fun.
Then, I was watching the Home Show (which is no longer on) . They were asking for Home Cooks to send in a recipe..
Sent in the recipe and two days later my daughter Mary Dixie and are in LA on the show! It was a blast!
