3 Eggs
2 Cups Sugar
1 Tbsp. Vanilla
1 Cup Oil
3 Cups Flour, Sifted
1 tsp. Salt
1 tsp. Cinnamon
1 tsp. Baking Powder
1 tsp. Baking Soda
1 Cup Chopped Nuts and Dates, if desired
2 Cups Peeled and Coarsely Ground Zucchini

Directions:
Directions:
1. Beat eggs until fluffy. Add sugar, vanilla and oil.
2. Stir in zucchini, flour, salt, cinnamon, baking powder, and baking soda. Mix well.
3. Add nuts and dates, if desired.
4. Put into two greased and floured loaf pans.
5. Bake at 325ºF for 1 hour.
